- 1 lb small potato
- olive oil
- salt and pepper
- 2 sprigs fresh rosemary, leaves
directions
- Preheat oven to 425. Wash potatoes and boil until almost tender. When done, drain and drizzle with a touch of olive oil; roll in sea salt, a little petter and rosemary leaves. Put potatoes in a roasting pan; bake in oven for 25 minutes, until golden. Or, wrap in aluminum foil and throw on the grill for the same amount of time.

the boil first, roast later worked wel! i used a sea salt that had shallots and peppercorns in the mix, then sprinkled some fresh rosemary in before rolling. the only caveat: if using large baking potatoes, double the time. it took about 45 minutes for two large meal-sized baked potatoes in the pot of slow boiling water and another 30-35 in the oven.
