- 8 russet potatoes, unpeeled (6-8 Oz Each)
- 4 teaspoons olive oil
- 1 teaspoon salt
- 3⁄4 teaspoon coarse black pepper

TOPPINGS
- chopped green onion
- chopped bell pepper
- ranch dressing or ranch dip
- sour cream
- shredded cheese
- crumbled blue cheese
- crumbled crisp bacon
- salsa
- diced avocado
- diced tomatoes
directions
- Stab potatoes with fork.
- Coat potatoes with oil.
- Sprinkle with salt and pepper.
- Wrap each potato individually in aluminum foil; place in 5 to 6 qt slow cooker.
- Cover and cook on LOW heat setting 6 to 8 hours or until potatoes are tender.
- Serve with toppings.

This was one of my favorite meals growing up! :) I got a crockpot for Christmas and this was the first recipe I wanted to try with it. These potatoes came out wonderful! The olive oil & salt/pepper combo gave them great flavor. We topped ours with shredded swiss cheese. DH loved it! Thanks so much for sharing!
