Baked Mashed Potatoes With Parmesan Cheese and Breadcrumbs

"I saw this on Everyday Italian with Giada De Laurentiis. So, I tried it out, and oh my goodness! The potatoes were so good, even before baking them, that my boyfriend and I were licking the spoon like it was cake batter. The cheeses really are what make this a winner."

  • Preheat the oven to 400 degrees F.
  • Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside.
  • Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes.
  • Drain; return the potatoes to the same pot and mash well.
  • Mix in the milk and melted butter.
  • Mix in the mozzarella and 3/4 cup of the Parmesan.
  • Season, to taste, with salt and pepper.
  • Transfer the potatoes to the prepared baking dish.
  • Stir the bread crumbs and remaining 1/4 cup of Parmesan in a small bowl to blend.
  • Sprinkle the bread crumb mixture over the mashed potatoes.
  • ***Recipe can be prepared up to this point 6 hours ahead of time; cover and chill.***
  • Bake, uncovered, until the topping is golden brown, about 20 minutes.
  • The recipe said 6-8 servings, but it seemed to make so much more.

  1. MMMMM! I made these after I got the recipe from the Food Network site. So EASY & Good! Almost like twice baked potatoes with a lot less work and yummy italian cheeses. My family loved these. Served with Pork Milanese and a green salad.
     
  2. This dish is just heavenly! I agree with the earlier poster who said it's like twice baked potatoes only with less work. It's also good with some cooked, crumbled up bacon added.
     
  3. I made these for Thanksgiving and they were really wonderful. Even though everything was delicious, I found my self wanting more of these potatoes. Great dish!!!
     
  4. WOW what can I say...these were fantabulous!! Served them with Italian Chicken and Garlic Green Beans...Easy and Delicious!!
