Baste occasionally with the juices that accumulate in the pan. This salmon is also excellent barbecued over medium coals.

Hi Claudia, I have been using your Baked Marinated Salmon recipe for years, it works out perfectly every time (although I have cut back on the amount of sugar). I saw your comment that you found the recipe in The Lighthouse Cookbook some time ago. I am now a volunteer tour guide on a 148 year old lighthouse in South Australia, and loving all things to do with lighthouses! Do you know who the author is of the Lighthouse Cookbook you have? Would love to see if I can get a copy of the book! Thanks, KarynReply

This was excellent! I am saving it for future use. I used a very large fillet so I ended up cooking it longer than the recipe called for, about a half hour. I broiled it the last few minutes to caramelize the sauce. Delish! Also, I was unable to cook it when I had planned, so it marinaded overnight but turned out fine for lunch the next day. Thanks! Wonderful salmon marinade!Reply
