  • 1 tablespoon olive oil
  • 1 lb cod fish fillet (cut into 2 pieces)
  • 4 tablespoons alouette garlic & herb spreadable cheese
  • 34 cup fire roasted diced tomato, bell peppers, onions and garlic (drained)
  • 1 tablespoon parsley (dried)
  • 12 teaspoon italian seasoning (dried)
  • 2 tablespoons parmesan cheese (grated or shredded)
  • butter-flavored cooking spray
  • salt and pepper

directions

  • Preheat oven to 400 degrees.
  • Pour oil into baking dish, coat the bottom of the pan; arrange the cod fillets in the dish, pat dry with paper towel.
  • Spread fillets with Alouette cheese spread; 1 tablespoon on each fillet, top with drained tomatoes, parsley, parmesan cheese, Italian seasoning then spray with butter flavored spray.
  • Bake uncovered in preheated oven for 25 minutes.

  1. Quick and easy ,maybe next time cook for 20 min as fish was a bit over cooked.Spreadable cheese and herbs def help the bland taste of cod.Used drain chopped tomatoes with garlic and herb and it makes a meal with rice or potatoes
