Baked Cabbage (Bulgaria)

ingredients
- 1 head cabbage, chopped
- 1 tablespoon paprika
- 1 teaspoon fresh ground black pepper
- 1⁄3 cup vegetable oil
- 1⁄3 cup vinegar
- 1⁄2 cup water
- salt
- 3 tomatoes, chopped
- 1 -2 bell pepper, chopped (I used red bells)
directions
- Mix the cabbage with the peppers and tomatoes, add the spices, oil, vinegar and water and transfer to a baking dish.
- Bake for 1 to 2 hours (after the first hour, keep checking to make sure that the top of the dish doesn't burn) or until the cabbage is soft.

I very loosely followed this recipe, but it turned out fantastic. Firstly I could for someone who requires a special diet, so I left out the oil and salt and opted not to add the vinegar. I added a couple of small chopped onions, garlic and sliced mushroom. I threw it all in a big roaster and baked it stirring frequently to avoid burning. Wow, This was so packed with flavour and really very little effort. Thanks for posting.1Reply
