- 8 ounces bacon, roughly chopped
- 1 1⁄2 cups breadcrumbs
- 2 spring onions, chopped
- 1 tablespoon chopped fresh parsley
- 1 lemon, rind
- 1 egg white
- black pepper
- 1 pinch paprika
directions
- Place the bacon in a food processor with the breadcrumbs, spring onions, parsley, lemon rind, egg white and pepper.
- Process the mixture until it is finely chopped and begins to bind together.
- Divide the mixture into 8 even sized pieces and shape into long ovals around 8 soaked bamboo skewers.
- Sprinkle the koftas with paprika on a barbecue for 8-10 minutes, until browned and cooked through.

It's not quite BBQ weather here in the UK (but we are ever hopeful!) so I made these under the grill. They were delicious, I used gluten free breadcrumbs and added a touch of smoked paprika to the mix, which gave a lovely smokiness to the bacon. We all agreed we will be making these again,,,and you never know we might actually get to use the BBQ!!!Reply
