Bacon Cheese Frittata

"Here's a tasty little number that doesn't require any special ingredients. You'll feel like you're out for breakfast while cooking at home. I substituted sausage in place of bacon because it's what I had. Recipe from Taste of Home Quick Cooking July/August 1999, courtesy of Diana Bullock who likes to prepare this for overnight guests. She keeps cooked bacon in the freezer to cut down on preparation time."

  • In a bowl, beat eggs, milk, butter, salt, and pepper.
  • Pour into a greased 11x7x2" baking dish.
  • Sprinkle with onions, bacon, and cheese.
  • Bake uncovered at 350 for 25 to 30 minutes or until a knife inserted near the center comes out clean.

  1. I reduced this for four serving and DH ate two servings it was so good. I did add asparagus to it also and cooked perfectly in 25 min. Served with Hot Cross buns. YUM.
     
  2. Great frittata! It was quick to mix up and get in the oven and cooked perfectly in 25 minutes. Loved the addition of the green onions, gave it a fresh taste. Will be making this again! Made for All You Can Cook Buffet.

  4. I don’t often eat breakfast, but I started to get a little hangry late in the morning. I happened upon this recipe and figured it sounded simple enough! Well, it was. Prep is quick and is done before oven finishes preheating. I used turkey bacon instead of regular bacon, but adhered to the rest of the ingredients exactly. It cooked for 25 minutes in the 11x7” pan and had a delightful light custard texture to it. I debated if I should eat several servings, but decided to exercise some self-restraint!

  5. I added 1/4t. salt and 1/4t. season salt instead of 1/2t. salt. I added 2 extra eggs. Besides eggs, I added 3T green onions, (I love onions), 1/4-1/2C finely chopped ham steak, and 5 pieces cooked bacon chopped. I used everything else in the rcp as directed. I baked at 350° for 35 minutes. 2 people tried it for the first time and said it was amazing! One even asked for the recipe.
