Bacon and Cheese Mini Muffins

ingredients
- 3 cups Bisquick
- 1⁄4 cup vegetable oil
- 3 eggs
- 1 (10 3/4 ounce) can cheese soup
- 12 slices bacon, cooked and crumbled
- 1 cup cheddar cheese, Shredded
directions
- Cut bacon into small pieces and cook, drain well on paper towels.
- Mix bisquick, vegetable oil, eggs, cheese soup and shreeded cheese.
- Pour into mini muffin pan and top with crumbled bacon.
- Bake at 325 for 20 minute.
- You can also mix the bacon in the batter or even substitute crumbled sausage.

Made these for Spring PAC 2011. I gave these 4 stars. My hubby and I liked these muffins. I'd say they were more of a biscuit then a muffin. Also we think they are better suited for breakfast. I plan to make these again adding sausage and chicken broth flavored protein powder to bump the protein. My 8 yr old picky newphew didn't like them that much. Overall we will have these again for sure! Thanks for posting a yummy recipe! Christine (internetnut)
