Bacon and Avacado Pasta Salad created by Ginger Cook

Delicous salad great for those summer bbqs. Adopted from a recipe I found online, and is a real crowd pleaser.

  • To make the dressing, combine mayonnaise, lemon juice, lemon zest, sugar and thyme in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add the olive oil in a slow stream until emulsified; set aside.
  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  • Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  • In a large bowl, combine pasta, bacon, avocado, lemon-thyme dressing, salt and pepper to taste.
  • Serve immediately, garnished with thyme.

    So fresh tasting. I make a much smaller amount for two. I can kind of guess how much of each ingredients to use in the dressing, and nothing goes to waste.

    To start I only had 1 avocado, so I halved everything else. I also did not use a food processor instead I mixed in a tight lid container and use a wisk until creamy and then added the olive oil a bit at a time and shook the container. Came out just fine. Hubby and I both liked it. I thought the amount of pasta was too much, so I probably used about 4 oz of pasta. (Remember I cut the recipe in half.) I thought it could use a little something else??? Just trying to get healthy avocado into our diet. All in all a winner. I will make again and add something else. I’m thinking lime....
