ingredients
- 1 ripe avocado
- 1 tablespoon rice milk or 1 tablespoon oat milk
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1⁄4 teaspoon paprika
- 1⁄4 teaspoon salt
directions
- mash avocado.
- stir in with other ingredients.
- or.
- use food processor.
- add dash of hot sauce if desired and paprika and salt are to taste -- not always 1/4 teaspoons.
- makes 1/2 cup.

What a great Mayo Substitute for people with egg allergies (and milk). Very tasty, but I did have to add some pepper. I used this in my chicken salad. It was very good and my 2 year looked at me and said, "Very good mommy." and proceeded to eat her Avocado Mayo Chicken Salad. This is a keeper! Thanks!
