  • In a medium bowl, combine peas, sliced water chestnuts and red pepper. Mix yoghurt, mustard, dill, salt and pepper in a small bowl. Add to pea mixture and stir to combine ingredients.
  • Chill before serving.

  1. Really nice salad. I did play with the dressing a little by adding a little extra yogurt to offset the mustard. The cruncy texture of the red bell peppers and water chestnuts was a nice addition to the peas. Easy to make and the colors really pop.
     
  2. Great recipe. I am a huge fan of peas and always looking for new recipes. I was a little apprehensive of the mustard in the dressing and even more concerned when I tasted the dressing right after I mixed it - the mustard was very dominate!! However, after refrigerating it overnight, that dressing was incredible and I have a new favorite pea salad recipe!!

  4. I really liked this salad. The water chestnuts offer a delightful crunch in a tart dressing. Very different from the standard pea salads I've tried in the past. I only used a quarter of a red bell & elected to julienne the water chestnuts. Thank you for sharing the recipe!

Tweaks

  1. Delicious! I chopped the water chestnuts and used radishes instead of the pepper (the kids won't eat raw pepper.) I've had a similar salad with sugar-this is an interesting variation. Thanks!
