Asparagus Ham Casserole

ingredients
- 2 cups rice, cooked
- 1 lb asparagus, sliced
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup evaporated milk
- 1 cup water
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon Worcestershire sauce
- 1 cup cheddar cheese, shredded
- 2 cups ham, cubed
- 1⁄4 cup almonds, slivered
directions
- Place cooked rice in the bottom of a well greased 10x6 baking dish.
- Top with sliced asparagus.
- Melt butter in a saucepan; blend in flour.
- Add evaporated milk and water; cook until thickened.
- Turn off heat.
- Add salt, pepper, and Worcestershire sauce.
- Add cheese and ham.
- Pour over rice mixture.
- Sprinkle with almonds.
- Bake at 375 degrees Fahrenheit for 35 minutes.

Lovely tasting one dish meal and I do love those. I would make this again but the next time I'll par-boil the asparagus a bit. Mine was very small size spears and even being cut into about 3/4 inch lengths it was still quite hard when the dish was done. I used more cheese than ask for just because I like a really cheesy cheese sauce. All in all a very nice dinner with a green side salad.Reply
