Saltine-Cracker Asparagus Casserole

"Though I'm not particularly a fan of canned asparagus, this casserole version produces a mighty fine dish...it's all in the sauce."

  • Preheat oven 350 degrees.
  • Melt 2 tbs butter in microwave-proof bowl, then stir in flour till smooth.
  • Add 2 tbs liquid from canned asparagus to flour mixure; stir well.
  • Stir in sour cream, grated cheese, salt, pepper, and hot sauce.
  • Thoroughly drain one can asparagus and arrange in bottom of ungreased 9"x2" square casserole.
  • Cover evenly with half the sour cream mixture.
  • Thoroughly drain second can asparagus and layer.
  • Top with remaining sour cream mixture.
  • Melt 3 tbs butter and mix with cracker crumbs; spread evenly.
  • Bake uncovered 30-40 minutes or until bubbly.

  4. This was very good. It went over well in my house. The kids even ate it up with no complaints. They do like asparagus, but we've never done it like this. Leftovers were still good, though the top was better the first time, of course. Thanks!
     
  5. This is a great recipe, although I found it a bit salty, my fault!....not the recipe!!! I used Salada biscuits for the topping, and they are very salty but next time must remember to use salt free Salada's. I added salt to sauce as well and think it was a little too much....ahh well, it was still really good! I used asparagus cuts, only because I had 2 large cans to use up, but even with the cuts the recipe turned out well. Next time I think I will try this recipe with fresh asparagus, and I think with fresh asparagus this would be even more fantstic! This is a very easy recipe to prepare and a great side dish. Thanks gailanng will be making again!

  2. Oh how much do I love thee, oh asparagus you? I saw this recipe the other day, and knowing I had a full bunch of fresh, (drenched) asparagus to be cut and used from the garden, and....since it's rainy and rainy, I thought I would love to use this as a delicious dinner. And so it turned out to be made right away. So I don't like to make recipe changes, however; I don't think the following affected this recipe, but I used as previously mentioned, fresh asparagus and also instead of *saltines* I used Recipe #87258 and crumbled these up for the topping. I cooked and blanched the asparagus in 1 cup of water, and I used the cooking water in place of the canned asparagus liquid. I see no reason to even change anything in this heart warming, good to warm your bones and soul with recipe. Absolutely stunningly delicious! Baking time was perfect. Made for *Flower Power* in Everyday is a Holiday May 2009
