Asparagus and Orzo Pasta With Broiled Salmon

- water
- 1⁄4 lb asparagus, cut into 3 inch pieces
- 1⁄2 cup orzo pasta
- 5 ounces salmon fillets
- salt and pepper, to taste
- 1⁄2 ounce feta, crumbled
- 1⁄4 tablespoon fresh dill, chopped (or 1/2 tsp dried dill)
- 1⁄2 tablespoon lemon juice
- 1⁄2 teaspoon olive oil
- pepper, to taste
directions
- Preheat the broiler.
- Bring a small pot of water (with a lid) to a boil (about 5 minutes).
- Add asparagus and orzo to the pot.
- After 3 minutes, remove only the asparagus and continue cooking orzo according to package instructions (usually about 6 minutes).
- While orzo cooks, season 5 oz. salmon filet with salt and pepper and broil for 5 minutes, or until opaque throughout.
- Meanwhile, whisk together feta, dill, lemon juice, olive oil, and pepper to taste.
- Flake the fish and toss together all ingredients.
