Asian Bok Choy and Mushrooms

I love Bok Choy and put this recipe together by combining parts of a few others and it turned out delicious. You're sure to love.

ingredients
- 1 lb bok choy, one bunch at store
- 4 ounces mushrooms
- 1 tablespoon sesame oil
- 1 tablespoon lemon juice
- 1 tablespoon low sodium soy sauce
- 1⁄4 teaspoon ginger
- 1⁄4 teaspoon garlic
- 1⁄4 teaspoon salt
directions
- Clean bok choy and cut into small bite size pieces including leaves.
- Heat sesame oil in skillet and add mushrooms and bok choy.
- Add remaining ingredients and stir fry for about 5 minutes.
- Serve hot.

Lovely and easy-to-make side dish. I love sesame oil, so was delighted that you called for a whole tablespoon of it. Yum, yum. I assumed that you added ginger and garlic powder, but I think a dish like this benefits from the fresh ingredients. So I used a 1-inch piece of ginger cut in fine shreds and a clove of garlic minced. Thanks for posting your creation.Reply

This was very good! I used shiitake mushrooms and a lot more ginger and garlic than called for. I cooked the stems and mushrooms for about 5 minutes, then added the leaves along with the sauce and cooked for just a few seconds until the leaves were barely wilted. I also added some sesame seeds for a garnish. This was my first time cooking bok choy and I think it was a great introduction to this healthy veggie. Semi-picky DH didn't have any complaints :) Thanks for sharing, we will be making this again!Reply

Bok choy and mushrooms are a perfect combination. I made this just as written, but doubled the garlic and ginger. This was simple and tasty without being drowned in a sauce. The veggies were still crunchy and not overcooked or soggy. You could add some shrimp or chicken and make this a meal, but it's great just as is. Thanx!Reply
