ingredients
- 4 medium white potatoes
- 1 teaspoon salt
- 1 tablespoon dried mint
- 1⁄2 large purple onion, sliced
- 1⁄4 cup olive oil
- 1⁄4 cup lemon juice
directions
- Boil potatoes until done.
- Slice when cool.
- Add all the ingredients together.
- Toss and chill about 2 or more hours.

Made this for a pot luck and everyone enjoyed. I was concerned that people would miss the mayo in the dressing but this was much better. The mint was a perfect amount. Very subtle. I used fresh. The lemon juice did come through as a more dominant flavor but was very delicious. The olive oil contributed to it tasting rich and addictive. I think I added more salt than it called for.
