Apricot-Mustard Chicken Breasts (Ww-Friendly)

- 1 lb boneless skinless chicken breast
- 1⁄4 cup Dijon mustard (I use a homemade Dijon that is VERY spicy)
- 3 tablespoons apricot preserves
- 1 tablespoon soy sauce (reduced-sodium)
- 1 tablespoon scallion, finely chopped
- 2⁄3 cup water
directions
- In a large no-stick skillet, combine the water, mustard, preserves, soy sauce, and scallions. Mix thoroughly.
- Add chicken. Bring to a simmer over medium-high heat, then reduce heat to medium or medium-low. Gently simmer for 15-18 minutes, or until chicken is cooked through.
- If the sauce becomes too thick while cooking, just add a few more tablespoons of water.

This is sooooo good! I was expecting it to be really sweet but it's not. It has a nice tangy sweet taste to it. The ingredients really complement each other. I did brown my chicken first in a little cooking spray to give it some color but that ended up not needing to be done. The end result is a tender piece of chicken that melts in your mouth. I don't see any point in giving lower scores; I can't be sure a recipe has turned out badly because of something I've done. Besides, even if I don't like it, the next person might -- and if they see a one-star review, they'll never bother to try it.
