Apricot Berry Smoothie

"Just made this up today with what I had on hand and both my toddler and I loved it. A yogurt based smoothie that is quite tasty. The flaxmeal is not a MUST, but does increase the "health factor" and it tastes great in this smoothie (feel free to increase it to 2 T if you like)."

  • 14 cup sliced strawberry (frozen if you like)
  • 5 apricot halves (from a can or tin with juice reserved)
  • 34 cup nonfat vanilla yogurt
  • 1 tablespoon apricot nectar (reserved from the can)
  • 1 tablespoon flax seed meal
  • 14 cup cold water

directions

  • Place first 5 ingredients in blender and mix well. Add water til you get the desired consistency. Taste and add a bit more apricot nectar if it's not sweet enough for you!

  1. Since I was making this for 2 of us, I was liberal with the measurements & also used apricot nectar instead of the water! Used frozen strawberries & also had the apricots in the freezer til almost frozen, to give the smoothie a real chill! GREAT TASTE COMBO! [Tagged, made & reviewed in Beverage Tag]
