- 1 lb thinly sliced beef, cut into strips
- 1 -2 teaspoon dried chili pepper flakes (optional or to taste)
- 1 -2 tablespoon fresh minced garlic (or to taste)
- 3 tablespoons Dijon mustard
- 3 tablespoons soy sauce
- 2 (3 ounce) packages ramen noodles, uncooked
- 2 tablespoons oil
- 2 cups snow peas
- 1 medium red bell pepper, diced large
- 3⁄4 cup apricot preserves
- 1⁄2 cup beef broth
- 3 tablespoons chopped green onions
- 2 tablespoons toasted sesame seeds, divided
directions
- Combine the sliced beef with dried chili flakes, mustard, soy sauce and garlic (if using) refrigerate 4 hours or overnight.
- Cook noodles according to package directions (omitting seasoning packages).
- Heat oil in large skillet, over medium-high heat, until hot.
- Add beef with marinade; stir-fry 2 minutes.
- Add noodles, preserves, broth, onions, and 1 tbsp sesame seeds.
- Cook 1 minute, or until heated through.
- Top with remaining sesame seeds before serving.

Delicious! I cut back on the apricot as well although it was more for my not wanting to use all of my beloved home-made jam on dinner instead of on my toast lol!! It was a really tasty alternative to our usual sesame beef stir-fry. I was a bit short on time so just increased the marinade quantity & had it sit while I prepared veges etc. Was still pretty tops, thanks Kittencal, another wonderful recipe to add to my cookbook!!

Kittencal, we loved this dish. Had it for dinner tonight! The only thing I changed is to cut back on the preserves to 1/2 c. and my hubby said it was a good call for him because he doesn't like things too sweet. This recipe was perfect the way it was. Oops, I forgot, I added beans sprouts because we had them...yum. We also thought for a future taste treat we might add some crushed red pepper to the recipe for a hot and sweet taste. We will definitely make this again and hubby's having it for lunch tomorrow. Thanks so much for sharing this recipe. I'm glad I was the first one to rate it!
