Applesauce Spice Muffins

  • Grease or line 12 large muffin cups and set aside.
  • In a large bowl, cream together butter and brown sugar; beat in egg.
  • Stir together flour, baking powder, soda, salt, cinnamon and nutmeg.
  • Combine with raisins and almonds.
  • Stir dry ingredients into the batter in 3 parts, alternating with the applesauce in 2 parts.
  • Mix just until blended.
  • Transfer to muffin cups, almost filling each cup.
  • TOPPING: Combine all topping ingredients and spoon equally over muffins.
  • Bake at 375 F.
  • for 20 minutes or until well risen and firm to the touch.
  • Let cool on a rack and serve for breakfast or snacks.
  • Makes 12 big muffins.

  1. These muffins are very nice. I like the level of spiciness, and they are quite light. The sugar on top adds to the sweetness. Personally, I would rather eat them as snacks than as part of breakfast, but we are all different. I did substitute dried cranberries for raisins and nuts. Thank you very much for sharing this recipe with us.
     
  2. Very good muffins. I had all the ingredients on hand and followed the recipe exactly, except I use Sugar in the Raw and not granulated white sugar.

  4. Olga,Olga,Olga!!!These were fantastic!!!I had to improvise,though.I realized that I didn't have enough brown sugar so I had to use white.I also decided to omit the raisins and almonds.In any case,they turned out moist and marvelous!!Thanks for a great recipe!!
