Applesauce Oatmeal Muffins

  • Soak the oats in water for about one hour.
  • Preheat the oven to 400 degrees.
  • Spray muffin pan with cooking spray.
  • Combine the oat mixture with the applesauce and egg whites, and mix until combined.
  • In a separate bowl measure and whisk the dry ingredients together.
  • Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.
  • Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
  • Combine the cinnamon and sugar and top each muffin with some of the mixture.
  • Bake for 20-25 minutes or until done.
  • Remove from pan, cool and enjoy.
  • These can be frozen and reheated in the microwave for a quick breakfast.

  1. YUMMY! Tasted great and I love the fact that it is healthy! It is always refreshing to find a healthy, low cal muffin! I think this would be great for my mom and friend who are both diabetic. I made an error when I added the dry ingredients (I added the sugar and cinnamon to the batter instead of using it as a topping) and the muffins tasted awesome. I had a cinnamon muffin instead. It's all good. I will definitely make these over and over again with other additional toppings/ingredients for some variety. Thanks for the recipe!
     
  2. They were so good, I made a second batch for the freezer. Didn't have that 'leaves and twigs' taste like many healthy muffins--very moist and tasty. I threw in a handful of walnuts and really liked the texture. Just what I was looking for, smelly. Thanks.
