Apple Tapioca (Crock Pot)

- 4 cups apples, peeled and sliced
- 1⁄2 cup brown sugar
- 3⁄4 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 2 tablespoons dry tapioca
- 1 lemon, juice of
- 1 cup boiling water (must be boiling)
- 1⁄2 cup raisins (optional)
directions
- In medium bowl, toss apples with brown sugar, cinnamon, salt and tapioca until evenly coated.
- Place apples in crock pot.
- Pour lemon juice over top.
- Pour in boiling water.
- Cover and cook on high for 3-4 hours.
- Add raisins (if using) before serving, but don't cook with everything else (Not sure why, but my mother never does).
- Serve warm.

I followed directions exactly and mine was very thin, almost watery when finished. So we decided to put it in the fridge and wait for the next evening to try it, and then it thickened up very nicely. We warmed it slightly and served it over vanilla ice cream. I was out of raisins, so I subbed dried cranberries which I added into the crockpot 1 hour before it was done cooking. My husband and I decided this reminded us greatly of the apples served in TV dinners. It was very nostalgic for us and we both enjoyed it.

I made 1/2 the recipe for the 2 of us. Made a nice dessert, kinda like a chunky apple sauce. I used 1 huge Granny Smith apple. Cooked just 2 hours and it was done. I used 1 teaspoon cinnamon as I like lots of cinnamon in apples,it didn't thicken up at all, don't know if was supposed to. I liked being able to put it in the crockpot (small 2 litre size) and forget about it. I will make it again.
