Apple Tapioca (Crock Pot)

"One of my father's favorite Fall desserts. His mother used to make it in the oven, but my mother adapted it to the crock pot to make it simpler. A great way to use the abundance of apples right now! Something different, something yummy and comforting."

  1. I followed directions exactly and mine was very thin, almost watery when finished. So we decided to put it in the fridge and wait for the next evening to try it, and then it thickened up very nicely. We warmed it slightly and served it over vanilla ice cream. I was out of raisins, so I subbed dried cranberries which I added into the crockpot 1 hour before it was done cooking. My husband and I decided this reminded us greatly of the apples served in TV dinners. It was very nostalgic for us and we both enjoyed it.

  2. I cooked this on the stovetop in about 15 minutes, which also allowed the sauce to thicken quite a bit. Only change I would make next time is to use half the salt and cinnamon.

  3. I made 1/2 the recipe for the 2 of us. Made a nice dessert, kinda like a chunky apple sauce. I used 1 huge Granny Smith apple. Cooked just 2 hours and it was done. I used 1 teaspoon cinnamon as I like lots of cinnamon in apples,it didn't thicken up at all, don't know if was supposed to. I liked being able to put it in the crockpot (small 2 litre size) and forget about it. I will make it again.

I'm a graduate student studying agricultural economics, originally from Georgia. (Go dawgs!) I try to eat very healthy, most often low-carb. But, I do love sweets sometimes. I like to bake for others so much- so I do it all the time and have become known for just stopping by with casseroles, brownies etc..
