Apple Streusel Cake

"I tinkered with one of my favorite coffee cake recipes, and came up with this apple cake! It's delicious, hot or cold, and smells so good while it's baking! Can be served with whipped cream, but it's moist enough to serve by itself."

  • Preheat oven to 350F; Grease a 9" x 13" pan.
  • Slice the apples and set aside.
  • To make the streusel topping, combine 1/4 cup flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and chopped walnuts.
  • Cut in the butter until it resembles coarse crumbs; set aside.
  • In a large bowl, combine 2 cups flour, 1 cup brown sugar, 1 teaspoon ground cinnamon, baking powder, and salt.
  • Cut in the butter until it resembles coarse crumbs.
  • Add the milk, vanilla extract and egg, mixing until just combined.
  • Stir in half the apple slices by hand, and spread batter into prepared pan.
  • Top with remaining apple slices, then sprinkle the streusel topping over the apples.
  • Bake at 350F for 30 minutes, or until done.
  • Store any leftovers in the refrigerator.

  1. It was very good, but it was a bit ordinary, next time perhaps a bit more cinnamon or nutmeg in the batter might be nice. It took about 15 minutes longer for mine to bake, but worth it. Smellls heavenly baking.
     
  2. I just baked this cake and it was AWESOME. Super moist and tasty. I left the peels on and I thought it added a nice visual touch, and kept the apples together more.
