- 4 apples, pared and diced
- 1⁄2 cup sugar
- 1 lemon, rind of, finely chopped
- 3 cups hot water
- 1⁄2 cup red wine or 1/2 cup white wine
- 2 tablespoons flour
- 2 tablespoons cold water
- 1⁄2 cup heavy cream
directions
- Combine apples, sugar, lemon rind, and hot water. Cook until apples are tender. Add wine. Blend flour and cold water. Thin with a few tablespoons of hot soup. Simmer 5 minutes. Chill, and add cream before serving.
