Apple Nut Loaf

This is from a recipe book that came with the SmartWare silicone baking set my Grandma Retha sent to me for my birthday.

ingredients
- 1⁄2 cup shredded carrot
- 1 1⁄3 cups applesauce
- 1⁄2 cup vegetable oil
- 1 teaspoon vanilla
- 2 eggs
- 3⁄4 cup granulated sugar
- 2 1⁄4 cups flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 1⁄3 teaspoons cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 cup walnut pieces, coarsely chopped
directions
- Preheat oven to 350 degrees.
- Combine carrots, applesauce, oil and vanilla.
- Add eggs and sugar and mix together.
- In another bowl, mix the rest of the dry ingredients.
- Stir dry ingredients into applesauce mixture until blended. Do not over mix.
- Divide mixture into 2 loaf pans.
- Bake for 55 minutes or until toothpick inserted in center comes out clean.
- Remove from the oven and allow to cool before removing from bake ware.
