Apple, Mushroom and Brie Stuffing Cups

- 2 tablespoons butter
- 1⁄3 cup onion, diced
- 1⁄3 cup celery, diced
- 1 1⁄4 cups cremini mushrooms, diced
- 1 small zucchini, diced
- 1 medium apple, cored and diced
- 2 (120 g) boxes Stove Top stuffing mix
- 1⁄4 cup pecans, chopped (optional)
- 1 teaspoon dried sage
- 1⁄4 teaspoon black pepper
- 1⁄4 cup water
- 1 large egg
- 200 g double cream brie cheese, sliced into 24 wedges and rind removed
directions
- Preheat oven to 400°F.
- Melt butter in a large pan and saute onions and celery until tender.
- Add mushrooms, zucchini and apples and saute until slightly browned.
- Remove from heat and transfer to a large mixing bowl to cool.
- Add Stovetop Stuffing, pecans, sage, pepper and water to the vegetable mixture and stir until evenly combined and moistened.
- Add egg to the mixture and stir until evenly coated.
- Spray a muffin tin with non-stick cooking spray and scoop the mixture into each cup, pressing down gently as you go.
- Bake for 15 minutes or until the stuffing cups begin to brown on top.
- Remove from oven, place two wedges of brie cheese on top of each cup, then put back in the oven for 5 minutes or until cheese is melted.
