"This recipe is from the Liver Cleansing Diet by Dr Sandra Cabot. It is very healthy and tastes great. I don't add the sultanas because I don't like them and if I don't have almond oil or soy milk, I use canola oil and fat free milk and they still turn out great."

  • 1 12 cups wholemeal self-rising flour
  • 12 teaspoon mixed spice
  • 12 teaspoon cinnamon
  • 12 cup sultana
  • 2 egg whites
  • 2 tablespoons cold-pressed almond oil
  • 1 cup chopped cooked apple
  • 1 tablespoon honey or 1 tablespoon apple juice concentrate
  • 12 cup soymilk

  • Sift flour and spices and add sultanas.
  • Beat egg whites and add the oil, apple, honey and milk and blend thoroughly. Add to the dry ingredients and stir until thoroughly mixed.
  • Spoon into a lightly greased muffin tin and bake in a moderate oven for 17 minutes or until cooked.
