- Preheat oven to 350ºF.
- Cake:.
- In a large bowl, cream together shortening and sugar. Add eggs and lemon extract; beat well.
- In another bowl, sift together flour, baking powder and salt. Add to creamed mixture alternately with milk, beating after each addition.
- Pour mixture into a lightly greased and floured 10-1/2"x14-3/4" pan. Top with filling and bake for 1 hour or until cake tests done.
- Filling:.
- Combine all ingredients in a bowl; mix well. Spread over cake to cover.

This is a very nice change of pace for a cake. I used it as a breakfast treat for a class of adults at church. It was a hit! Because I don't use shortening I subbed that out for butter but outside of that little change everything else remained the same. I think some chopped walnuts or almonds on top would be a nice touch too. Perfectly baked in 50 minutes in my oven using the size pan as stated. Loved the flavors of the cinnamon & nutmeg in the topping! Made for Potluck Tag in the Cooking Games with Friends forum.

This cake was pretty good. My other grandmother - Oma B - used to make a cake like this whenever her boys came back to the farm to visit. I think they may have just come for the cake! ;) I split it into two regular sized pans rather than take a chance on ruining one giant cake. We have the other cake in the freezer now. It is very dense and holds the filling nicely. I think a nice addition would be some almonds to the top. Made and Reviewed for 123 Hit Wonders - Thanks! :)

I made this as part of the snack table for a work birthday party, and it was quite popular. It wasn't super-sweet, so I think it would be nice as a breakfast item, even. I'm glad that I used my big lasagna pan to bake it in, because this makes a big thick cake. I bet this would be really good with a caramel drizzle, too.
