"Delicious apple cake that I found in the TOH Home Style Suppers Volume 4, 2000 submitted by Iona Redemer of Calumet, OK."

ingredients

• 3 tablespoons butter, softened
• 1 cup sugar
• 1 egg
• 1 cup all-purpose flour or 1 cup whole wheat flour
• 1⁄2 teaspoon ground cinnamon
• 1⁄2 teaspoon ground nutmeg
• 1⁄2 teaspoon salt
• 1 teaspoon baking soda
• 3 cups apples, diced and peeled
• 1⁄4 cup nuts, chopped
• 1 teaspoon vanilla extract
• whipped cream or ice cream

directions

1. In a mixing bowl, cream butter, sugar and egg.
2. Stir together dry ingredients; add to creamed mixture (batter will be thick).
3. Stir in the apples, nuts and vanilla.
4. Spread into a greased 8 inch square baking pan.
5. Bake at 350 degrees for 35-40 minutes or until cake tests done.
6. Serve warm or cold with whipped cream or ice cream.
