Another Honey Pecan Chicken

- 6 boneless skinless chicken breasts
- 6 ounces Stove Top stuffing mix
- 1 cup hot water
- 2 ounces butter (1/2 stick)
- 1⁄2 cup orange juice
- 1⁄2 cup pecan pieces
- 1⁄4 cup honey
- 2 tablespoons orange juice
- 6 slices bacon
directions
- Stir the contents of the vegetable seasoning packet, butter and water in a bowl to melt the butter.
- Add the 1/2 cup orange juice, stuffing crumbs and pecan pieces.
- Stir just to moisten.
- Mix honey and the 2 tablespoons orange juice.
- Arrange chicken in a single layer in a 9 x 13 inch bake dish.
- Spoon 1/2 of the honey mixture over the chicken.
- Press 1/2 cup stuffing on each chicken breast.
- Wrap 1 slice of bacon around each one.
- Spoon remaining honey mixture over the bacon.
- Bake 40 minutes at 375 degrees or until cooked through.

We were all a bit divided on this one. The Stove Top stuffing we have here already has seasonings mixed in, so I had to combine steps 1 & 2. Also, the bags don't have the weight on them so after making the recipe I wonder if the Costco box filled with individual stuffing mixes are bigger than the 6 ozs called for here. Either way, I found trying to wrap a piece of raw chicken topped with stuffing a bit tedious, so my wraps were pretty loose. I squeezed fresh oranges for the orange juice, and I used your suggestion of cranberries in the mix, but with all the other strong flavors going on, I'm not sure they added much. DS said the honey in the dish was overpowering but that it was one of the best new recipes we'd tried lately (we have at least one new recipe EVERY day), DD (toddler) ate the chicken all up :), DH said it was okay, but he wouldn't ask to eat it again. And I thought the basic recipe was good, but with a couple tweaks it would be great. I think chopped, partially fried & drained bacon, stirred into the stuffing mixture, would actually make for better distribution of the bacon flavor. And for Honey Pecan Chicken, the pecans were simply lost in the combination of flavors. Maybe that's just personal preference, as we're used to coating the chicken with pecans in most recipes for Honey Pecan Chicken. I'm sorry we couldn't rate it higher, but thanks for sharing this recipe, Toni! :)
