DIRECTIONS

  • Add oil to hot pot.
  • Add onions and garlic and fry until onions are translucent.
  • Add tomatoes, peppers, bay leaf, chicken stock, basil, thyme, wine, and lemon juice, and let simmer for 15 minute.
  • Add beans and let cook another 15 minute.
  • Add parsley and chicken, and cook until chicken is done.
  • When soup is done, mash some of the beans.
