Ann's Cornish Hens (My Great Recipe Cards)

"Cutting down on meat portions is an easy way to cut calories. These Cornish Hens are split and marinated in a fragrant mixture of soy sauce, orange juice, garlic, onions and a small amount of oil. Broil quickly and serve with a tangy dipping sauce, if desired. Note: I have not made this recipe, was posted as a request from another 'Zaar member."

  • Rinse hens and pat dry. Cut into halves from the center of back through breast. Remove excess fat and tails.
  • Combine marinade ingredients. Spoon some under the breast skin. Coat hens on all sides. Marinate at room temperature for 1 hour or covered in the refrigerator for 2 hours or more.
  • Place pieces skin-side down on broiling pan. Broil 6 to 7 inches from heat for 10 minutes. Turn and broil 10 minutes longer.
  • Spoon remaining marinade over the hens. Bake at 350 for 10 minutes.
  • If used, combined Dipping Sauce ingredients in saucepan. Heat slightly and serve with the hens.
  • "Prep time" does not include the time to marinate.

  1. I love these Cornish hens! I have made them several times. Each time I've made them I have changed the cooking time. Seems like the outside wants to burn before the inside gets done. The last time I made them I baked them like 19 minutes on one side turned them over. baked another 19 minutes. Them put under broiler for 7 minutes turned them over and broiled another 7 minutes. They came out almost perfect on inside. And almost perfect on ouside. Sooo moist; I had a half left over; had it for lunch the next day; and just put it on a plate in the microwave on reheat for 2mins and 40 seconds. And it was just as good as the night before. Thanks for this recipe, very good!

Well.....let's see.....I am currently into canning...I want to learn everything there is to learn. I want to quit my job in the summer so I can can! But, my dh won't let me..sigh! ;-) I am also into photography and beading!
