"I found this in a September 1981 issue of Bob Appetit in an advertisement for Kraft cheese. It has all the right ingredients for a tasty, quick and kid-friendly meal! You could top it with a dollop of sour cream or guacamole for an even tastier treat!"

  • Brown meat;drain.
  • Add onion,tomato,olives and seasonings; cook until onion is tender.
  • Combine cornmeal,flour,salt and baking powder.
  • Add water and butter or margarine; mix until smooth.
  • Stir in 1 cup cheese and olives.
  • Pour cornmeal mixture into greased 9-inch pie plate.
  • Spoon meat mixture into center of cornmeal mixture and press down gently.
  • Bake in a 400 degree preheated oven for 25 minutes.
  • Top with remaining cheese.
  • Garnish with additional olive slices, if desired.

  1. Wow! I'm still in shock. I've been searching for this recipe for years, mainly at the request of my dad. I used to make this very same recipe, from the very same magazine, for my family when I was in high school and they all absolutely loved it; so much that they've been asking for the recipe years later but, I had lost it. Now I finally get to make it for my own husband and kids. This is a super easy, quick and delicious dish. Enjoy!
     
  2. Just made this for dinner and really enjoyed it. The bread in the bake stays moist. We liked the no fuss but yummy mix of what is like polenta and a spicy mix of ingredients. A good mexican night meal. Thank you for posting! We would do it again.
