ingredients
- 1 (20 ounce) can pineapple chunks or (20 ounce) can crushed pineapple, undrained
- 1⁄2 cup maple syrup
- 1⁄4 cup Dijon mustard
- 1 jalapeno, minced
- 1 cup golden raisin
directions
- Combine all ingredients & mix well.
- Pour over your ham of choice & bake as directed, basting occasionally.

This smelled so good cooking! I reduced the recipe to make 1 cup of glaze and then poured it over thick sliced ham steaks. I then baked them covered with foil. I used maple flavored syrup. I am sure the maple flavor would be stronger with pure maple syrup and would enhance this dish. I also seeded the jalapeno. That said, I really enjoyed this. It wasn't overly sweet or spicy, yet really added to the smokey flavor of the ham. This is one I will use again on a whole ham. If you desire more of a kick leave the seeds of the jalapeno in. It was very quick and easy, and had a nice flavor. The golden raisins absorbed the flavors, plumped up, and tasted very good. The texture was more like a chutney cooked with the ham rather than a glaze. The ham never glazed. Perhaps less liquid would help with the glazing. Good luck with the contest!
