Amazing Brownies

"These brownies taste like chocolate Madeleine cookies--they are just wonderful, and can be served as brownies or as cupcakes. Not only that, you only need two pans to make them: the pot in which the butter is melted, and the pan into which you pour the batter."

• Serves: 12-24

ingredients

• 2 cups white sugar
• 1 cup butter
• 1⁄2 cup cocoa powder (Dutch processed is best)
• 1 teaspoon vanilla extract
• 4 eggs
• 1 1⁄2 cups all-purpose flour
• 1⁄2 teaspoon baking powder
• 1⁄2 teaspoon salt

directions

1. Heat oven to 350* F.
2. Melt the butter in a medium-large pan.
3. Let cool slightly; then mix in the ingredients in the order given.
4. Bake in either a greased brownie pan or a lined muffin pan.
5. Bake for 35-45 minutes, checking after 30 minutes.
6. The brownies are done when a toothpick comes out with a few moist crumbs.
