- 1 cup low-fat low-sugar vanilla soymilk
- 3⁄4 cup plain low-fat yogurt
- 6 ounces firm silken tofu
- 1⁄4 cup dry-roasted almonds
directions
- Place ingredients in a blender.
- Blend until smooth.
- Serve cold.

I love this recipe. I make it whenever I need a change or want something light. I never grow tired of it. It can be a little grainy with the almonds, but just blend it longer. I use a vitamix - which does really well, but I'm sure any blender will do. You could grind the nuts in a coffee grinder first, though.

THESE SHAKES ARE REALLY GREAT. I know the tofu sounds pretty gross, but you would never know it's in there.( This recipe is from the 2nd or 3rd south beach book.) Just look for UNSWEETENED soymilk. (its already lowfat & unsweetened + no sugar). It needs sweetener. I use liquid stevia (about 12 drops) or1 or 2 packets of Truvia. Also use flavorings/extracts of your choice. Almond, vanilla are ok. You can get more interesting flavors that are not artifial at a health food store. Flavors like banana or coconut are really good.This recipe makes 2 shakes. They are unbelievably tasty & filling.
