All Day Macaroni and Cheese

"I got this recipe from my Creative Photo teacher in 11th grade. She knew I had a thing for mac and cheese, and she was kind enough to write out her recipe for me. Very simple!"

  • Grease a 3 1/2-quart or larger crock pot.
  • In a large bowl, mix together macaroni, evaporated milk, milk, eggs, salt, pepper and 3 cups of the cheese.
  • Add mixture to crock pot and sprinkle with remaining cheese.
  • Cover and cook on low for 5-6 hours until mixture is firm with golden edges.
  • NOTE: Do not remove cover or stir!

    We love this recipe! I make it just as directed except that I double it (for an extra-large Hamilton Beach slow cooker) and cook it all day on warm. I often prep the night before so I can just plop in from the fridge and go! It turns out amazing and my kids demand thirds and fourths. I cooked it for my nieces and they both asked for thirds too.

    This is a great idea for a recipe. The taste is very nice. I would suggest adding a bit more pepper to give some more depth. The real issue I have is the time to cook it in the crockpot. I used my 10 hour setting (lowest setting I have) and in 6 hours this dish was overly cooked when I returned home and very dry. I had to add another cup or so of milk and more cheese to build it back up but the sides of the dish were not able to be used because they had "crusted". With this said it does not mean I'll never make it again as I WILL but I will definitely check it after 4 hours (even using the lowest heat setting) so it does not get too well done. I am a 21 year old homemaker (and soon to be mommy!) from the Florida Panhandle. I love to cook and try new things. I never got all the cooking wisdom from my mother that many other people have, so I've had to teach myself over the last couple years. I have to admit, though, it's been lots of fun with it's good share of hard work. Thank goodness my husband is so forgiving! DH and I have been married for almost two years now, and I just love him to pieces. We are having our first baby in March, so then I can cook for him, too! Well, as soon as he's ready. :) I am pretty young, and I am just now experiencing being invited to events and being asked to bring a dish. It's very exciting to me, and makes cooking all the more fun. Also, I am always hearing from DH, "These mashed potatoes are good," or whatever it is I am making, "but they aren't quite like my mom's." So, I am hoping that one day he will be saying to other people, "These mashed potatoes aren't as good as my wife's!" ha ha.
