Alicia's Spanish Rice

- 1 (15 1/2 ounce) can chicken broth
- 1 medium onion, minced
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 1 cup rice
- 1 (14 1/2 ounce) can chopped tomatoes, with jalapenos
- salt and pepper
directions
- Fry onion and garlic in olive oil until translucent then add rice. Fry for a few minutes more.
- Slowly add chicken broth and juice from tomatoes. Bring to a boil.
- Crush up tomatoes with your fingers and add to rice. Give it a quick stir and then let it come to a boil. Lower heat to medium-low.
- Cover and simmer 18-25 minutes depending upon how moist you like it.
