Alabama Pecan Bars

• Yields: 1 9 x 13 pan
• Serves: 12-16

ingredients

• 4 large eggs, beaten
• 1 cup sugar
• 1 cup brown sugar
• 1 cup canola oil
• 1 1⁄2 cups self rising flour
• 1⁄4 teaspoon salt
• 1 teaspoon vanilla extract
• 2 cups pecans, finely chopped

directions

1. Preheat oven to 350, and lightly grease a 9 x 11” baking dish with butter or Kittencal’s Pan Release.
2. In a large mixing bowl, gently mix together eggs, sugars, and oil until fully incorporated.
3. Mix in self-rising flour and salt until incorporated.
4. Add vanilla extract and blend inches.
5. Fold in pecans.
6. Pour batter into prepared baking dish.
7. Bake for 30-35 minutes, or until toothpick inserted comes out clean.
8. Remove from oven, and let cool before slicing.  I won’t lie -- I cut when they’re still lukewarm.
