DIRECTIONS

  • Cut the tomatoes into wedges and layer in the bottom of a glass bowl.
  • Slice the cucumber and layer on top of the tomatoes.
  • Top with thinly sliced red onion, feta, olives and parsley.
  • Whisk the remaining ingredients together and pour on the salad.
