African Spiced Vegetable Salad

"Very good and a nice change. I am not a big fan of cauliflower so I use a bag of fresh stir fry vegetables instead. The presentation is very colorful. I adapted this recipe from a Weight Watchers cookbok. 1 point per 1 cup serving."

  • Steam the vegetables, covered 2 minutes.
  • Rinse under cold water; drain well.
  • Combine spices in a skillet over medium heat and cook 2 minutes stirring constantly.
  • In a medium bowl, combine spice mixture, sour cream, vinegar, and honey.
  • Add vegetables and mix well.

  1. Very colorful dish and the dressing is great when just made. It's an interesting blend of spices and not at all overwhelming. I put this together and refrigerated it for three hours. Don't do that. Put the dressing on just before serving as it gets watery with time.
     
  2. This is one of my favourite meals. We make this atleast 4 times a week. I also use fresh vegetables: carrots, French beans, potatoes, greenpeas(frozen but defrosted), cauliflower and celery. I'm not a big broccoli fan, so I leave that out. I substitute the cider vinegar with freshly squeezed lemon juice. Most often, I enjoy the vegetables all by themselves, i.e., minus the dressing. I most often add a pinch of turmeric powder, 1/4 tsp. red chilli powder and 1/2 tsp. of black pepper to the veggies while they are steaming. When I do that, I skip the nutmeg and ginger completely.
     
  3. This was really good but the kids weren't impressed. *sigh* I used fresh veggies which adds to the prep time significantly.
     
  4. Made this as an alternative to the usual salad. It has a nice flavor (with a hint of zing) with nothing overpowering another.

<p>I live in Arizona. Cooking is a relaxing hobby and I love finding healthy meals that have a lot of flavor and heart to them. Recipezaar has not let me down. I could not possibly pick a favorite cookbook. I love searching used bookstores for old cookbooks. I collect other cookbooks that look intresting or have healthy dishes. My collection is modest, but I love it. Also, I love the Taste of Home magazines. They have real food that real people cook. I would have to say my pet peeves are people who drive while talking on cell phones and people who cannot spell potato. It is p o t a t o not p o t a t o e. There is no e unless you are spelling the plural form of potato which is potatoes. I frequently see that word mispelled in recipes and it makes me think the recipe is somehow devalued because of the spellings. The Zaar system of ratings works for me. I do try to explain myself in my reviews and welcome any questions or comments on what I have said. It is not my intention to be mean-spirited if I did not like something (it is rare for me not to like a recipe though):) Recipezaar brings such a nice element to my life and I feel it has been enriched by the wealth of knowledge both in everyone's contributed recipes and on the forums. Also, it is such a nice feature that you can log on practically any time to get help with a recipe or ingredient that might otherwise be imtimidating to prepare by yourself.</p>
