This unique salad is not only beautiful, but delishious and nutritious. It is my take on a 'Stoplight' salad. It works well as a side dish or as a standalone for a complete meal. I used a red and white quinoa, bulgur mix ( it came premixed in a box) instead of just quinoa and I am glad I did. You could just as easily use only quinoa. The texture and flavour was fantastic. I will also tell you here what I did not put in it, you can mix and match the ingredients you prefer; 2 C chopped seeded tomato and 1/2 C pitted sliced kalamata or black olives. I would have added the olives but I did not have any on hand. We loved this salad and had it for lunch.
