ingredients

  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (14 1/2 ounce) can diced tomatoes, drained
  • 1 (15 1/4 ounce) can sweet corn, drained
  • 1 (12 1/2 ounce) can chicken breasts, drained
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1 (10 ounce) can green enchilada sauce
  • 1 (14 ounce) can chicken broth
  • 1 (1 1/4 ounce) packet taco seasoning

directions

  • Mix all ingredients together in a large pot.
  • Heat until warm, stirring occasionally.
  • Serve with tortilla chips.

  2. I made a couple alterations because my son won't eat anything with tomatoes in it, and my husband doesn't like anything too spicy. I used a small can of tomato sauce instead of the diced tomatoes and only a half packet of the taco seasoning. It is absolutely delicious and soooo easy and quick to make.

  3. A perfect chicken taco soup and so easy. I used Chicken Taco seasoning packet, pinto beans, one being a Southwester seasoned can of pintos for a total of 36 ounces of beans, didn't drain the petite diced tomatoes, with my minor tweaks, I pretty much made it as written. Thank you Hollyism, for sharing and soup that will go into my family's meal rotation.
     
  4. I followed the recipe, except I couldn’t find green enchilada sauce and substituted green Taco sauce. It was absolutely delicious. I sprinkled it with cheddar jack cheese and a small dollop of sour cream. Can’t wait to make it again!
     
  5. Such a quick and easy dinner! I use this for those nights that I don't have a lot of time to cook... or my kitchen is a mess and I don't want to deal with it ;) I serve it with lime tortilla chips and, on top of my serving anyway, a dollop of sour cream.

Tweaks

  1. This was absolutely the best recipe for taco soup I have ever made! I tweaked it just a bit for a little more spice..I used petite diced mexican tomatoes, red enchilada sauce (out of green) and added low sodium black beans instead of regular (gotta watch the salt at my house) can of mexican style corn, I omitted the pinto beans as husband is not a fan and instead added diced fresh onion and mushrooms just sautéed them in the pan before adding anything else, diced up a leftover chicken breast and added 1/2 lb of ground turkey and a little cumin. All of the rest was the same. Oh my..it's just my husband and I at home now and we about devoured the entire pot! I bet it's like spaghetti or chili and even better the next day! YUM! THANK YOU!
