  • Preheat oven to 425 degrees.
  • Coat a large baking dish with vegetable or butter spray (Pam).
  • Toss all ingredients together in a bowl and coat well.
  • Place in baking dish and bake 30 minutes.

  1. Super easy and tasty. Use 2 tablespoons oil not teaspoons, the chicken will be nice and moist. If cooking whole breasts the cook time will be longer. I ended up cooking everything for 50 mins. 30 mins might work if cut up or for thinner breasts.
     
  2. This was so yummy. I did add extra olive oil and paprika to the dish. It was far from dry. I also cut my potatoes smaller. It was done in half an hour. My picky hubby loved it. I will be making this again.

  4. Made this recently and it was really good! I love the fact I can just throw it together and half an hour later it's done. I used boneless, skinless chicken breasts cut up in bite sized pieces and followed the instructions exactly. I added a bit more garlic but it didn't need it. I plan on making this again today.
     
  5. This is a good and simple recipe. If you will quarter your potatoes and zap them in the microwave just a few minutes to "preheat" them, the dish not take near as long to cook. I cut my chicken into smaller pieces to make sure it's done, can't stand raw chicken!

Tweaks

  1. Great recipe but cooked this in my Air Fryer Grill. Chicken came out really tender and I only had to cook everything for 20 minutes at 425. Just be sure to spritz everything with oil prior to cooking and that way you use less than 1 teaspoon oil. Yum!!
     
  2. Only change I made was to use baby gold potatoes since that is my personal preference. It turned out great and I loved every bite!
     
  3. This was super easy. I used 2 breasts and 2 thighs (boneless, skinless). BUT I messed up and used Chipotle Chili Powder instead of Paprika (they look the same). The taste was ok, I didn't love it. Also, the thighs didn't cook all the way through. I'll have to do it correctly if I make it again. Maybe it can get 5 stars. :-)
