- 2 cups textured vegetable protein
- 2 cups water
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 (1 1/4 ounce) package taco seasoning (one pack)
- 1 red pepper, cut into strips
- 1⁄4 cup salsa
- flour tortillas or taco shell
directions
- In a large skillet, heat the water over medium heat, and add the TVP, stirring well. Allow the TVP to reconstitute for 2-3 minutes.
- Add oil and soy sauce, then peppers and taco seasoning, stirring well.
- Allow to cook for another 3-5 minutes, stirring frequently. Mix in salsa and remove from heat.
- Serve wrapped in a flour tortilla or hard taco shells with your choice of toppings.

A TVP warning for newcomers, it STINKS when you reconstitute it, at least with heat! I turned on my wax warmer/scent gizmo to counter attack the smell. And like others said, you need to crank up the spices! I will continue to use 2 cups TVP however, as you can freeze this stuff, which I did, since I am single. I decided to go full on Lacto-Ovo Vegetarian after successfully trying this recipe, since the flavor is just fine!

I think this recipe would be more flavorful with half the TVP. Taco seasoning packets call for 1 lb. ground beef and most references I've seen say 1 cup TVP once reconstituted is equivalent to about a pound of ground meat. I could tell 2 cups was way too much, and the final product wasn't very flavorful. Next time I'll either cut the TVP/water in half or add a second packet of taco seasoning.

Quick, easy, low calorie and inexpensive - and did I mention Vegan??!?!? Great recipe. I made 1/2 the recipe but ended up using the full 1/4 cup of salsa. I also added 1/4 cup of tomato sauce (my preference). Next time I will definitely saute up a little onion and garlic and add it to the mix. Hubby loved it too. Served it in blue corn crispy taco shells topped with Vegan Pepperjack cheese, some tomatoes, avocado and hot sauce. YUM. I have some leftovers as well which I plan to use in burritos tomorrow with beans, rice tomato, lettuce and guacamole. Thanks for sharing.

Great fast, simple one pot recipe! Thank you! I modified mine a bit, adding diced onion, nutritinal yeast flakes, and using a bef boullion concentrate instead of the soy sauce. I didn't have taco seasoning, but I used the ingredients from a taco seasoning recipe on recipezaar but with more cayenne because I like it spicy. A bit of cheddar to top it on the tortilla, and it's a taco. Guess I'll just write up the modification so I can remember it, lol! 1/2 cup water, tvp was enough to fill 2 10" torts generously.
