10 Can Chili

"I got this recipe from Tony and Patti Manna. It makes a good amount of soupl This recipe is very simple to throw together with pantry ingredients. I have changed almost every ingredient in the recipe at one time or another and it always turns out great! For the beans I use any combo of pinto beans, chili beans, black beans, etc or I have also used 3 cans of the same kind of beans. This is a very forgiving recipe."

  • 2 (15 ounce) cans corn, drained
  • 2 (15 ounce) cans tomatoes
  • 2 (10 3/4 ounce) cans minestrone soup
  • 3 (15 ounce) cans beans, any combo
  • 1 lb ground meat
  • 1 medium onion, chopped
  • 1 (1 1/4 ounce) package chili seasoning mix

directions

  • Brown ground meat and onion until meat is done. Add all of the other ingredients. Cook on stovetop until heated through or let simmer. I usually brown the meat and onions and place it all in a crockpot and let simmer until time to eat.

I have lived in Nebraska (Go Huskers!) for all but 14 years of my life, when I lived in Tucson, AZ (loved it!). I have been a Respiratory Therapist since 1981. I have 2 sons, 35 (will eat anything that doesn't eat him first!) and 22 (extremely picky and has never liked much meat) and one grandson (diabetic), 16. I also have two lovely step daughters and they collectively have 5 delightful children. I love, love, love to cook and peruse cookbooks and recipes, but do not do it much since marrying my wonderful husband 7 years ago as he likes to stay busy with side construction type jobs, so I never know if he will be home for an evening meal or not (and he refuses to eat leftovers!). I really need to get better about making smaller meals. It wouldn't hurt either of us to lose a few pounds, either. My favorite cookbooks are an old Betty Crocker cookbook (orange or red cover) I got as a wedding gift in 1973 and a cookbook from a community hospital from the early 1980"s.
