1.5 Quart Crock-Pot Rice Pudding

"A healthier take on rice pudding. I've found sushi rice creates a great texture, but this will also work well with Arborio rice. Warning: this will not work with soy milk, I've tried it and for some reason the rice doesn't absorb it well!"

  • combine all ingredients in 1.5 quart crockpot.
  • cook on high for 2.5 hours, stirring occasionally.
  • serve plain or with ice cream.

  1. Tried this tonite with just one change....instead of raisins I used chopped dates. The dates were wonderfully sweet but still this was bland. The texture was lovely and I though the dates would add enough sweetness. I will make this again due to the ease of work but will add some brown sugar or other sweetener. I also will add a pinch of salt.

I love trying all different types of cuisines. my favorites right now are indian, mexican, and japanese :) I'm currently a student so I try to find recipes that I can tweak in order to make smaller portions. I don't like eating the same thing more than once a week and I hate wasting food so this becomes a very creative process ( and not enough freezer space!)
