How to Make Hot Honey Biscuits with Thyme-Roasted Peaches

Nothing screams summer like ripe peaches. Our friend Zac Young will show you how to make the most of them — using your trusty grill.

Here's a dessert that's got everything you could want from the summer season: fresh stone fruit and biscuits made on the grill (yes, you can do that!). Feel free to use nectarines, apricots or even plums in place of the peaches and play around with different herbs — rosemary and lemon verbena are both delicious. Since the biscuits are grilled, they require a little bit of babysitting but your efforts will be well rewarded.

1 Prepare the peaches

First, cut your peaches into wedges and lay them out on a piece of tin foil. Scatter butter, thyme and honey over top, and repeat with another piece of foil if you need to. Fold up the foil to make flat packets, sealing the peaches inside.


2 Mix biscuit dough

Combine flour, sugar, salt, baking powder and lemon zest in a bowl, then add butter and work it in with your fingers until the butter forms small pea-sized clumps. Stir in the buttermilk and gently knead the dough until it comes together. Find the full recipe here.

3 Divide dough & form biscuits

Roll out the dough and cut it into eight pieces to make eight biscuits. Shape them into circles before throwing them on the grill.

4 Grill biscuits & peaches

Put your biscuits and peach packets on the grill and close the lid. After five minutes, flip everything. After five more minutes, you should be ready to assemble.


5 Assemble & Drizzle with Hot Honey

Top the biscuits with three to four slices of peach, making sure to include any delicious juices that seeped out. Garnish with a dollop of crème fraiche or unsweetened whipped cream and drizzle hot honey on top — then take a step back to appreciate your masterpiece. Get the full recipe here.
