How to Make Chocolate Chip Cookies

1 Mix the Wet Ingredients

In a mixing bowl, add 3/4 c. brown sugar, 1/2 c. granulated sugar and 3/4 c. (12 Tablespoons) of melted butter and whisk together until there are no lumps.  You can either whisk by hand or use a hand or stand mixer with a whisk attachment.  Then add 1 egg plus 1 egg yolk and 2 tsp. of vanilla extract and continue to whisk until smooth.

Adding the melted butter and the extra egg yolk ensures that you’ll have a nice, chewy cookie texture.

2 Mix and Add the Dry Ingredients

Once you’ve mixed the wet ingredients, you’ll then need to combine the dry ingredients.  In a separate bowl, combine 2 1/4 c. all-purpose flour, 1 1/2 tsp. corn starch, 1 tsp. baking soda and 1 tsp. salt.  Whisk together to combine.
 

Gradually add the dry ingredients to the wet ingredients a few spoonfuls at a time, and mix.  This can be done by hand, or with a hand or stand mixer.
 

When all of the dry ingredients have been mixed, fold in 1 cup of semi-sweet chocolate chips.  Cover the dough and refrigerate for at least 2 hours or overnight.
 

TIP
Chilling the dough is critical. This ensures that the cookies hold their shape and bake evenly.

3 Roll the Dough into Balls and Bake

Preheat oven to 325 degrees.  Line cookie sheets with silicone baking mats or parchment paper to ensure a non-stick baking surface.

Using a large cookie scoop, shape the refrigerated dough into balls – approximately the size of golf balls for a larger cookie.  Place about 9 cookies on a cookie sheet and bake for about 12 minutes. 
 

Remove from the oven and let cookies cool on the cookie sheet for about 5-10 minutes and then with a spatula, transfer to a cooling rack to cool completely.  A full batch will yield about 18 large cookies.
